Rainy Days and Mondays
We've got Mondays down to a routine now. That is good, but still we are learning. We start out driving to the outskirts of town to a large supermarket. The prices are reasonable as opposed to other grocery stores, and the selection is good.
We did all of the shopping for tonight's meal and a refreshment for Wednesday's Institute. We spent around $40, which is pretty good, considering we fed 15 people. The funny thing is it would have been the same cost if only 5 had shown up!
It rained a lot this afternoon and evening. Everyone arrived wet and cold, but happy. How can you not love rain?....and Mondays?
It was a nice evening. Berklee and I were in the kitchen again doing ableskivers. We are getting better at it, but I think it will take more practice. Everyone loved them. I think another pan is in order if we do them again. The only way to feed a small crowd ableskivers (a Danish puffy round pancake/donut) is to have two pans going at the same time, because it takes about 10 minutes to cook them properly and you can only do 7 at a time.
Berklee was so cute about it. She made them with her mother every year at Christmas time and has had such good memories of all those occasions. She was happy to make them here, but we are still in the learning phase, and the pan is being "seasoned" - meaning I think that it needs to be used a few times - and it has to look like it has been used a lot. That is a lesson I take from Youtube. So many non-Danes on there wanting to show us how it's done!
I made some lemon bars this afternoon, which I will go now to cut and bag to take to the two sets of missionaries we will visit tomorrow. Yes....it's time for apartment inspections again! I really enjoy those times. We love those young missionaries, and we love spending a half hour with them or so. Then when we see them in London at the large zone conferences, even if they have been transferred out of our Reading Zone, we feel like they are ours.

| Berklee is so adorable! I was her faithful assistant in the making of these little tidbits. |

I do NOT forget you when I am praying. You are remembered morning and night.
