Cheating With Food Glorious Food!
Wednesday is our missionary district meeting. We start at 10:30 and end promptly at 12. The mission president has given us permission to fix the young missionaries lunch, if it is done in a half hour. So I have to have it already before they get here.
I cheated today....but so glad I did! I had a bag of IKEA meatballs in the freezer, and two envelopes of their sauce/gravy. You add water and cream, and British cream is wonderful. I also had a bag of potato wedges, which I coated in a little bit of olive oil and shook in a bag of Ranch dressing mix, then cooked in a very hot oven. I thought everything tasted excellent.
I was basking in their exclamations about how wonderful everything was, until SK told them they were IKEA meatballs and gravy. Oh well...sometimes I think his main goal in life is to keep me humble.
We sang "Happy Birthday" to Elder Tshendabo and had the great and wonderful "Death by Chocolate" cake. Even with a wannabe Betty Crocker cake mix and a strange little packet of pudding, it was delicious. All the missionaries loved it. Thankfully, SK did not regale them with the shortcuts on the cake.
I walked over to a pharmacy to fill the prescriptions from my doctor's appointment yesterday. He gave me antibiotics for my ears. I'm surprised that already they are beginning to feel better. They have been hurting and full of pressure for sometime and I am so grateful they are improving. I waited in line for nearly 30 minutes, but people around here seem so patient with lines. So I tried to be patient too.
For Institute this evening, I served a 7-layer dip with corn chips. Refried beans, pico di gallo, salsa, romaine, guacamole, sour cream, cheese. Mmmmm. I'm not going to lie It was one of my finer moments. Everyone loved it. Then I served the rest of the chocolate cake I had made for lunch (minus the extra slices I set aside for Elder Tshendabo). Minus two more slivers I set aside for me, since chocolate cake with chocolate buttercream icing is my favorite food in the world. (Wish I felt that way about broccoli.) One of our YSAs, Derek, stated after eating the refreshments that I am a genius. I'm trying not to let that go to my head....especially since I cheated with the ingredients all day today!
Our lesson was taught by Alistair (a dignified and kind Scot, and former stake president of this area) and was very insightful. He taught from The Book of Mormon, about Lehi's dream of the Tree of Life. Erin had sent me her notes from the lesson she taught on the very same thing yesterday. I was so prepared to hear the lesson tonight!!!!
We called Lia to sing Happy Birthday to her. We are so very grateful for our 38 years with her. She is a blessing to us.
