Soup, Sandwiches and a little bit of Stress

We inspected two missionary apartments this morning.  They were the Oxford missionaries, and we were supposed to have them done by the 17th.  But way leads on to way and we just couldn't get them scheduled....and when we thought we had them scheduled, something else got in the way.  It's that old "You live five minutes away...you can do it anytime" way of thinking that done us in.

I'm happy to report that we got them done, I came right home and got the paperwork done, and then I emailed them off to the mission office.  The sisters' flat has some problems, and I have repeatedly called their management office to try to get help.  I think we will finally have some changes.  Someone will be coming on January 6 to change out a water pump.  (You may remember that this flat is the legendary "Sisters who killed 8 mice" apartment.)

Last week, they kind of burned up their microwave, and the apartment still has a lingering bitter smell, even though the microwave has been ejected from the flat.  We will pick up another one for them in London tomorrow.  The office has a small collection of items from other missionary apartments, and they happily have a microwave oven!

By that time, preparations for dinner had to get underway, so I began to chop zucchini.  You might ask yourself what was I thinking, because this is not exactly the time of year to find plentiful supplies of luscious zucchini.  But we found some anyway, and I made zucchini soup.....which by the way, looks very Christmassy.  It has tomatoes and kind of a bisque.  So it was perfect. 

I partnered that with Zupa's Ultimate Grilled Cheese Sandwich.  I found a recipe online.  You spread a little bit of pesto on the bread, then a slice of mild cheddar, a few thin slices of tomato and another slice of sharper cheddar, and throw on the griddle!

Both were hits with the young people who were here....we had 7.  This close to Christmas that was a good number.  But by tomorrow, that number will be down even more.

It was a good day.

But now, I have some calligraphy to do.  One of the YSAs brought a book to be given to a family who has done a lot of kind things for the YSAs.  They want to present them with a book for Christmas.  It is a beautiful scrapbook.  They want a title on the front cover --- a long title --- in gold.  No pressure.

Actually it IS a lot of pressure....no room for mistakes.  I'll let you know tomorrow if I get it done without tears.

Yummy soup!! It’s the perfect thing for cold days. And good with the calligraphy! I’m sure it will be beautiful. 😊
