Note to Self

 If I were any of you, I would have many things to show for this day.  However, I am me! And the focus of this day for me was dinner this evening.

Madsen's Law: "Everything takes longer than I think it will."

We did get our studying done, and I got some laundry done, and a little bit of cleaning. We went to the grocery store first thing, and purchased all we would need for tonight's dinner.

I had made the cookie dough yesterday so that all I needed to do was put in the pans and bake it. Note to self: spreading thick cookie dough on top of parchment in a sheet pan with a spatula takes longer than scooping four dozen cookies onto cookie sheets. Cutting and wrapping four dozen cookies takes longer than slipping a couple of cookies into a baggie. Next time - use the cookie scoop and forget bar cookies....at least until COVID and its regulations go away. I try to have everything possible individually wrapped so that no one is touching communal serving utensils, trays or bowls.

After returning home from the grocery store, I made spaghetti sauce.  Note to self:  Buy bottled spaghetti sauce and add it to cooked ground beef. Cutting onions and garlic and putting it all together, plus the simmering time is very time-consuming.

After baking the cookies, I cooked the pasta and put together sauce, pasta and cheeses for baked spaghetti, poor man's lasagne. Note to self:  Just serve pasta in a big bowl and spaghetti sauce in another. Although I must say, people LOVE the baked spaghetti. And tonight, the truly loved it.  Most had second helpings.

I made two large pans full, enough for 12 good-sized servings. With twelve there, it probably would have been just right because most had a second helping. Except that three who came are pescatarians - people who don't eat meat, but do eat fish. In the afternoon, I made a second pan of spaghetti sauce, using more vegetables. I thought it was pretty good.  I layered the pasta the same way, with sauce and cheese (they do eat cheese and eggs). All three expressed gratitude more than once that I would make that special effort for them. Note to self:  Always plan on having a vegetarian dish, no matter what.

Four of the twelve were missionaries, the young elders and SK and me.  Another four of the twelve were non-members, and they seemed to have a great time. Note to self: Always have the young elders in attendance. They are fun and entertaining, and now they will be teaching one of the people in attendance there.

Note to self: Don't complain about all that cooking.  It was worth every minute.

The time savers aren’t always time savers, are they?! 😂 But I’m sure the vegetarians felt your love, as did the rest of everyone else. 😊
